- 2 tbsp olive oil
- 1 butternut squash, peeled and cut into chunks
- 6 sausages (we used The Co-operative’s Truly Irresistible Jalapeno and Coriander Sausages)
- 1/2 tsp chilli flakes
- Black pepper
- ¼ tsp garlic salt
- ¼ tsp onion salt
- ¼ tsp hot smoked paprika
- 1 red onion, cut into wedges
- Small punnet cherry tomatoes
Heat the oven to 180 degrees. Put the oil, butternut squash, sausages and seasoning in a large tray and mix with your hands so that all the ingredients are combined. Lay out in the tray evenly and put in the oven.
After 20 minutes, add the onion and cherry tomatoes. Mix well so that they are covered in the oil and seasoning.
After 30 minutes, the butternut squash should have started to caramelise, the sausages should be cooked and the tomatoes should be releasing their juices.
This is a simple dinner we made when we came in from the gym, once you’ve got the prep work done, there’s very little else to do!
